How The Bean Becomes Vanilla
A freshly picked pod has almost no flavor. Vanillin only develops through curing: a controlled sequence of heat, sweat and slow drying that our partner farms still do largely by hand. Move through the stages below.
Freshly harvested green pods are briefly heated — dipped in hot water around 63°C or sun-wilted — to halt vegetative growth and rupture cell walls, triggering the enzymatic reactions that will eventually produce vanillin.
Origin
Volcanic loam and shaded intercropping with coffee and clove give Java pods their dense, dark, classically "gourmet" profile.
Higher rainfall and cooler nights slow the sweating stage, producing a softer, more pliable bean with brighter top notes.
